Affordable Disney trip with 3 kids? Possible?

We will be driving and gas is covered already so that's not the problem. Any ideas on affordable hotel stay and food? We would like to stay 5 days and go to Animal Kingdom, Epcot and Disney Quest. Plus are there any other activities we can go for real cheap or free? Thank you!
